Aww my friend Cat came to visit her boyfriend ME at school today and gave me a whole thing of snickerdoodles! I was only expecting one or two, so this made my day and brought up my whole week even! Thanks so much love! :]
A Recipe
Jay-Chan’s Zuppa Toscana (this is for a LARGE batch, just FYI)
1 lb Italian sausage
3 large russet potatoes (approx ¼ inch diced)
1 large onion, chopped
8-12 bacon slices—cooked until crispy. Cut into bits.
2 cups swiss chard, chopped
2 cans chicken broth (the big ones. approx 48oz cans.)
6 cups water
2 cups heavy whipping cream
3 Tbs chopped parsley
1 tsp thyme
1 Tbs minced garlic
2 tsp Cayenne Pepper
2 Tbs Italian Seasoning
(Suggestion: flour/ or corn starch slurry at the end—for thicker consistency)
· Cook sausage in large pot. Take cooked sausage out of pot; cool, and cut into small cubes. Set aside. Toss in chopped onions until caramelized.
· Add potatoes, chicken broth, water, herbs, spices and garlic into pot—cook on medium heat until potatoes are cooked through.
· Add cooked sausage cubes and bacon bits.
· Salt and Pepper for taste.
· Simmer for another 10-12 minutes
· Turn to low heat.
· Add swiss chard and cream.
· Cook until chard is cooked. (just a couple minutes)
· Serve.
Cheese suggestion: asiago and parmesan
Better than olive garden, you won’t be disappointed :D
